Remember my friend Michele from Fun OC Parks?
We had an awesome playdate at the park?
And I sat on my giant pregnant rear the whole time while Michele watched my kiddos?
OK, now you remember!
She graciously offered to do some guest posts here at Eli’s Lids so I can spend more time smooching Cyrus!

Beets Are Ugly
I wrote a post in April about our beautiful produce baskets fresh from the farm. You see, I’ve learned many things since joining a local CSA (Community Supported Agriculture). I know how to prepare kohlrabi and how to store lettuce so it stays fresh. The kids appreciate the flavor when fruits and veggies are fresh. The most glaring lesson, though? Beets are ugly.
They are ugly when they come out of the ground:
They are even uglier after roasting:
The skin peels off easily, but then they become ugly and messy:
Beets are ugly until . . . they aren’t.
The fresh ones actually taste amazing when you marinate them in a recipe like this one from Simple Recipes. Kara Noel even gave me the okay to wear my crafty shirt – which got mildly splattered with beet juice. I tried to get creative and turn it into this:
Guess what happened when I put it in the wash? The beet juice disappeared! So it was my incredible disappearing craft project. Oh well!

Loved seeing this post as we have just been trying to get more beets in our diet. Also, I have a question that maybe you might be able to answer. We are considering joining the next quarter of CSA on a biweekly basis since we spend about $30+ a week anyway but on my last trip, my organnic broccoli had bugs, lots and lots of bugs. They were little tiny blue things and it really grossed me out. I had even soaked them in salt water, an old trick my mom taught me that was supposed to kill bugs on greens but they just kept appearing and I had to throw out the whole batch along with all the other veggies that I had soaked and cut up with the broccoli. Any chemical/pesticide free suggestion to get rid of veggie bugs on organic veggies?

From Michele:
Great question! Broccoli is a problem. I can't seem to get away from buggy broccoli. My only idea would be to trade it in for another veggie. All the other fruits and vegetables seem easier to clean:
beets, turnips, chard, lettuce, cucumbers, carrots, squash, etc. I always need to make store runs for extra bananas and carrots anyways.
Sorry I don't have a better idea. I hope someone else chimes in.

Glad to see you are spending time with your adorable new baby. (And, for Angela, if you click on the link in the post about “beautiful produce baskets” – I have some links on how to get started. I’d highly recommend every OTHER week (biweekly). It’s a lot of veggies to get through otherwise.)

I adore beets.
But I have to sing “we got the beat” every.single.time.

Very cool! I like beets, but have always been afraid of cooking them. I really would love to get into the CSA program. Where do I sign up?
Eli's Lids says
I've never made them… but I have never made most things!! Check out the link to sign up for the CSA thing!!
